How it tastes

Soft and round, with toffee, cocoa and dark cherry. Wheated bourbon has little rye bite, so the whole drink feels smooth.

Sweet-leaning, with citrus and fruit on the finish. Firm at about 33% ABV once diluted. Sweetened with rich brown sugar syrup.

Why it works

Wheat in place of rye as the second grain makes bourbon softer and rounder, which pairs naturally with chocolate bitters and brown sugar. Cherrywood smoke brings out the fruit, and a brandied cherry reinforces it.

Tips

  • Wheated bourbons such as Maker's Mark or Larceny work well here.
  • Use a rich 2:1 brown sugar syrup so you add sweetness without extra water.
  • Go light on the chocolate bitters at first. Two dashes is plenty with this much sugar.

Velvet Wheat Old Fashioned

Makes 1 drink. Wheat takes the place of rye. Rounder and softer, with toffee and fresh bread.

Method

  1. Smoke the glass first. Light cherrywood chips with a smoking gun or torch, trap the smoke under a cloche or the upturned rocks glass, and leave it covered.
  2. Add the rich brown sugar syrup and bitters to a mixing glass.
  3. Pour in the whiskey. Fill the mixing glass with ice and stir for 30 seconds, until the outside is cold to the touch.
  4. Uncover the smoked glass. Add one large cube to the rocks glass and strain the drink over it.
  5. Express the orange peel over the drink, skin side down. Rub it around the rim and drop it in.
  6. Add a brandied cherry on a pick.

Method

  1. In a pitcher or bottle, combine the whiskey, rich brown sugar syrup and bitters.
  2. Add 4 oz of cold water. This replaces the dilution you'd get from stirring.
  3. Chill in the fridge for at least 2 hours, or in the freezer for 1 hour.
  4. Just before serving, smoke each glass with cherrywood chips and keep it covered until you pour.
  5. Pour 2 ⅞ oz per glass over one large cube.
  6. Express the orange peel over each drink, skin side down. Rub it around the rim and drop it in.
  7. Add a brandied cherry on a pick.

Make it your own

  • Skip the smoke for a purely dessert-leaning drink.
  • Use a Luxardo cherry for a sharper, less boozy garnish.
  • Try demerara instead of brown sugar for a slightly drier finish.
