How it tastes

Peppery, dry and a little spicy, with citrus oil up front. Because a sugar cube dissolves slowly, the sweetness builds as you drink instead of arriving all at once.

Spice-forward, with citrus and fruit on the finish. Strong at about 39% ABV once diluted. A sugar cube build: the cube is muddled with the bitters.

Why it works

Rye is drier and spicier than bourbon, so it needs only a little sugar to balance. The sugar cube method is the traditional one: the bitters soak into the cube so every grain carries flavor as it dissolves. Rye was widely used in early versions of the drink, which is why this build feels old-school.

Tips

  • Soak the cube with the bitters and a splash of water before muddling. A dry cube will not dissolve.
  • Muddle gently until the sugar is a loose paste. You are dissolving it, not pulverizing it.
  • Serve over fresh ice cubes rather than one large cube for a slightly colder, quicker drink.

Rye Heirloom Old Fashioned

Makes 1 drink. Black pepper, clove and dried herbs. Drier and sharper than bourbon, and the original Old Fashioned spirit.

Method

  1. Drop the sugar cube into a mixing glass, soak it with the bitters and a barspoon of water, then muddle until dissolved.
  2. Pour in the whiskey. Fill the mixing glass with ice and stir for 25 seconds, until the outside is cold to the touch.
  3. Fill the rocks glass with fresh ice and strain the drink over it.
  4. Express a lemon peel and an orange peel over the drink, skin side down. Rub the orange around the rim and drop it in.

Method

  1. Dissolve the sugar cubes in the bitters and a splash of warm water in a pitcher, or swap in the simple syrup. Then add the whiskey.
  2. Add 3 ⅜ oz of cold water. This replaces the dilution you'd get from stirring.
  3. Chill in the fridge for at least 2 hours, or in the freezer for 1 hour.
  4. Pour 2 ⅝ oz per glass over fresh ice cubes.
  5. Express a lemon peel and an orange peel over each drink, skin side down. Rub the orange around the rim and drop it in.

Make it your own

  • Replace the cube with ¼ oz simple syrup if you are in a hurry.
  • Use only an orange peel for a rounder drink.
  • Try a higher-proof rye for more spice and a longer finish.
