How it tastes

Spiced, dark and dry, with cocoa and nutty tannins under the pepper of the rye and a sweet cherry finish.

Spice-forward, with dark oak on the finish. Strong at about 37% ABV once diluted. Sweetened with rich brown sugar syrup.

Why it works

Rye's spice stands up to dark flavors. Chocolate and walnut bitters bring cocoa and nut, while oak smoke adds a woody depth that echoes the barrel the whiskey aged in. Brown sugar syrup adds just enough sweetness to round the edges.

Tips

  • Oak smoke is stronger than fruit woods, so keep the glass covered only briefly.
  • Use a rich brown sugar syrup, 2 parts sugar to 1 part water.
  • A brandied cherry adds a boozy, sweet finish that suits the dry rye.

Midnight Rye Old Fashioned

Makes 1 drink. Black pepper, clove and dried herbs. Drier and sharper than bourbon, and the original Old Fashioned spirit.

Method

  1. Smoke the glass first. Light oak chips with a smoking gun or torch, trap the smoke under a cloche or the upturned rocks glass, and leave it covered.
  2. Add the rich brown sugar syrup and bitters to a mixing glass.
  3. Pour in the whiskey. Fill the mixing glass with ice and stir for 30 seconds, until the outside is cold to the touch.
  4. Uncover the smoked glass. Add one large cube to the rocks glass and strain the drink over it.
  5. Express the orange peel over the drink, skin side down. Rub it around the rim and drop it in.
  6. Add a brandied cherry on a pick.

Method

  1. In a pitcher or bottle, combine the whiskey, rich brown sugar syrup and bitters.
  2. Add 4 oz of cold water. This replaces the dilution you'd get from stirring.
  3. Chill in the fridge for at least 2 hours, or in the freezer for 1 hour.
  4. Just before serving, smoke each glass with oak chips and keep it covered until you pour.
  5. Pour 2 ⅞ oz per glass over one large cube.
  6. Express the orange peel over each drink, skin side down. Rub it around the rim and drop it in.
  7. Add a brandied cherry on a pick.

Make it your own

  • Replace the oak with hickory for a bolder smoke.
  • Use bourbon instead of rye for something softer.
  • Swap the walnut for Angostura to simplify the drink.
