How it tastes

Maple gives a warm, slightly woody sweetness, walnut bitters add a nutty, tannic edge, and the hickory smoke finishes savory, like a barbecue note kept on a tight leash.

Sweet-leaning, with dark oak on the finish. Strong at about 37% ABV once diluted. Sweetened with maple syrup.

Why it works

Maple and hickory share a smoky, caramelized character, so they blend instead of fighting. The walnut bitters tie the sweet and smoky halves together, and 100-proof bourbon is strong enough to stand up to both without disappearing.

Tips

  • Smoke the glass, not the drink. A few seconds under a cloche is plenty, because hickory turns harsh fast.
  • Use real maple syrup, dark grade if you can. Pancake syrup will make the drink taste flat and artificial.
  • Smoke in a ventilated room and never leave a torch or smoking gun unattended.

Method

  1. Smoke the glass first. Light hickory chips with a smoking gun or torch, trap the smoke under a cloche or the upturned rocks glass, and leave it covered.
  2. Add the maple syrup and bitters to a mixing glass.
  3. Pour in the whiskey. Fill the mixing glass with ice and stir for 30 seconds, until the outside is cold to the touch.
  4. Uncover the smoked glass. Add one large cube to the rocks glass and strain the drink over it.
  5. Express the orange peel over the drink, skin side down. Rub it around the rim and drop it in.
  6. Add a luxardo cherry on a pick.

Method

  1. In a pitcher or bottle, combine the whiskey, maple syrup and bitters.
  2. Add 4 oz of cold water. This replaces the dilution you'd get from stirring.
  3. Chill in the fridge for at least 2 hours, or in the freezer for 1 hour.
  4. Just before serving, smoke each glass with hickory chips and keep it covered until you pour.
  5. Pour 2 ⅞ oz per glass over one large cube.
  6. Express the orange peel over each drink, skin side down. Rub it around the rim and drop it in.
  7. Add a luxardo cherry on a pick.

Make it your own

  • Use cherrywood or applewood chips for a gentler smoke.
  • Swap one dash of Angostura for orange bitters if the drink feels too dark.
  • Leave the smoke out and it is still a rich maple Old Fashioned.
