How it tastes

Sweet caramel and cherry first, then a gentle smoke and fresh citrus oil from both the orange and lemon peels.

Sweet-leaning, with citrus and fruit on the finish. Strong at about 37% ABV once diluted. Sweetened with rich demerara syrup.

Why it works

It is The Standard with two additions: smoke and a second peel. Cherrywood is a mild smoke that adds a sweet, fruity edge instead of an ashy one, and the higher-proof bourbon keeps the drink from tasting watered down under all that garnish.

Tips

  • Smoke the glass before you start stirring so the aroma has time to settle.
  • Express both peels over the glass and drop in only the orange.
  • Add a Luxardo cherry on a pick for the full effect.

The Smoke & Peel Old Fashioned

Makes 1 drink. Caramel, vanilla and baking spice from new charred oak. The classic backbone.

Method

  1. Smoke the glass first. Light cherrywood chips with a smoking gun or torch, trap the smoke under a cloche or the upturned rocks glass, and leave it covered.
  2. Add the rich demerara syrup and bitters to a mixing glass.
  3. Pour in the whiskey. Fill the mixing glass with ice and stir for 30 seconds, until the outside is cold to the touch.
  4. Uncover the smoked glass. Add one large cube to the rocks glass and strain the drink over it.
  5. Express a lemon peel and an orange peel over the drink, skin side down. Rub the orange around the rim and drop it in.
  6. Add a luxardo cherry on a pick.

Method

  1. In a pitcher or bottle, combine the whiskey, rich demerara syrup and bitters.
  2. Add 4 oz of cold water. This replaces the dilution you'd get from stirring.
  3. Chill in the fridge for at least 2 hours, or in the freezer for 1 hour.
  4. Just before serving, smoke each glass with cherrywood chips and keep it covered until you pour.
  5. Pour 2 ⅞ oz per glass over one large cube.
  6. Express a lemon peel and an orange peel over each drink, skin side down. Rub the orange around the rim and drop it in.
  7. Add a luxardo cherry on a pick.

Make it your own

  • Use applewood for a lighter smoke.
  • Swap the 100-proof bourbon for 90 proof if you want it gentler.
  • Leave the smoke out and it is still a very good Old Fashioned.
