How it tastes

Soft pear and apple notes, honey sweetness, the anise edge of Peychaud's and a bright lemon finish.

Bright and fruity, with caramel sweetness on the finish. Firm at about 32% ABV once diluted. Sweetened with honey syrup.

Why it works

Speyside malts are known for fruit and honey, and often the richness of sherry casks. Honey syrup echoes those notes, and lemon keeps the drink fresh. Peychaud's adds a floral anise that the rich malt can carry.

Tips

  • Choose a 12-year Speyside such as The Glenlivet 12 or Glenfiddich 12.
  • Use a light hand with the sweetener. Speyside malts are already gently sweet.
  • Express the lemon over the drink, then drop it in or discard it, whichever you prefer.

Orchard Gate Old Fashioned

Makes 1 drink. Malts from along the River Spey. Pear, honey and the dried fruit of sherry casks.

¼ oz7 mlHoney syrup1 part honey to 1 part warm water
2 dashesOrange bitters
1 dashPeychaud's bitters

Method

  1. Add the honey syrup and bitters to a mixing glass.
  2. Pour in the whiskey. Fill the mixing glass with ice and stir for 30 seconds, until the outside is cold to the touch.
  3. Add one large cube to the rocks glass and strain the drink over it.
  4. Express the lemon peel over the drink, skin side down. Rub it around the rim and drop it in.

Method

  1. In a pitcher or bottle, combine the whiskey, honey syrup and bitters.
  2. Add 4 oz of cold water. This replaces the dilution you'd get from stirring.
  3. Chill in the fridge for at least 2 hours, or in the freezer for 1 hour.
  4. Pour 2 ⅞ oz per glass over one large cube.
  5. Express the lemon peel over each drink, skin side down. Rub it around the rim and drop it in.

Make it your own

  • Use demerara for a deeper, more caramel version.
  • Replace Peychaud's with Angostura for more spice.
  • Try an orange peel in place of lemon.
