How it tastes

Warm cinnamon and maple sweetness, with cherry and clove-like spice. It drinks like a fireplace feels.

Sweet-leaning, with pepper and spice on the finish. Firm at about 33% ABV once diluted. Sweetened with maple syrup.

Why it works

Cinnamon, maple and cherry are classic cold-weather flavors. Cinnamon smoke is gentle and sweet instead of ashy, and cherry bark bitters bring stone-fruit depth to match the Luxardo garnish.

Tips

  • Light the end of a cinnamon stick and trap the smoke under the glass for a few seconds.
  • Use pure maple syrup and keep to about ¼ oz so the cinnamon does not turn cloying.
  • Make sure the stick is fully out before you discard it.

Method

  1. Smoke the glass first. Light a cinnamon stick with a smoking gun or torch, trap the smoke under a cloche or the upturned rocks glass, and leave it covered.
  2. Add the maple syrup and bitters to a mixing glass.
  3. Pour in the whiskey. Fill the mixing glass with ice and stir for 30 seconds, until the outside is cold to the touch.
  4. Uncover the smoked glass. Add one large cube to the rocks glass and strain the drink over it.
  5. Express the orange peel over the drink, skin side down. Rub it around the rim and drop it in.
  6. Add a luxardo cherry on a pick.

Method

  1. In a pitcher or bottle, combine the whiskey, maple syrup and bitters.
  2. Add 4 oz of cold water. This replaces the dilution you'd get from stirring.
  3. Chill in the fridge for at least 2 hours, or in the freezer for 1 hour.
  4. Just before serving, smoke each glass with a cinnamon stick and keep it covered until you pour.
  5. Pour 2 ⅞ oz per glass over one large cube.
  6. Express the orange peel over each drink, skin side down. Rub it around the rim and drop it in.
  7. Add a luxardo cherry on a pick.

Make it your own

  • Replace the cinnamon with applewood smoke for a subtler drink.
  • Use rye for a spicier base.
  • Try orange bitters instead of cherry bark.
